I walk your site the way an Environmental Health Officer will — delivery through to service — and tell you exactly what they'd score you on, while you can still fix it.

Availability

Weekend visits, including Saturdays and Sundays

Environmental Health Officers work weekdays, and so do most consultants — which is exactly why a weekend visit tells you more. Saturday and Sunday service is when the kitchen is at full tilt: every fridge open, every section under pressure, agency staff in, and the shortcuts people take when they're busy on full display. That is the version of your kitchen worth scoring, so I book mock inspections across the weekend as readily as midweek.

Method

What happens on the day

M01
Walk-in and first impressions
I arrive unannounced-style and start where an officer starts — the entrance, the state of the premises and what is visible before anyone tidies up.
M02
Delivery through to service
We follow the food: goods-in, storage temperatures, prep, cooking, cooling, chilling, reheating, holding and service, looking for the points where control actually slips.
M03
Structure, cleaning and paperwork
Layout, surfaces, handwashing, pest proofing, cleaning schedules, temperature records, training records and your HACCP or SFBB documentation.
M04
Scoring and debrief
I score the site as an officer would across the three FHRS categories, then talk your team through the findings before I leave.
