Start from the situation, not the service list
Nobody wants a HACCP plan. They want a rating that stops costing them orders, an audit that passes, or a night's sleep before an inspection. So the useful question is not "what do you offer" — it is "what has just happened to you".
- An EHO visit is due or overdue
- Mock EHO inspection, £295. A half-day visit run the way an officer runs it, scored against the three categories, with a written report and a prioritised action plan. Weekends available.
- You've been rated 0, 1 or 2
- Rating recovery, from £950. Starts with the officer's report, ends with a re-inspection request you are actually ready for. Includes HACCP, training, documentation and a follow-up visit.
- Your food safety paperwork isn't real
- HACCP plan writing, £395. Built around your menu and your flow, with critical limits your team can monitor — not a downloaded template with your name on it.
- Allergens or labels worry you
- Allergens and labelling, from £450. Allergen matrix, PPDS and prepacked label checks, ingredient declarations and staff briefing on how to answer allergen questions.
- A customer is asking for BRCGS or SALSA
- Manufacturing compliance, quoted per site. Gap analysis, scheme implementation, audit preparation and retailer codes of practice.
- You've lost your technical manager
- Interim technical management, quoted. Someone in the building carrying the standard while you recruit, rather than a folder handed over at the end.
- You just want someone to ring
- Compliance retainer, £99 a month. Unlimited phone and email advice in working hours, one document review a month, a monthly check-in call and priority booking if an EHO visit is announced. Site visits and audits are quoted separately.
The two sides of the business
Roughly half of what I do is hospitality — restaurants, takeaways, cafés, dark kitchens and caterers dealing with food hygiene ratings and environmental health. The other half is manufacturing: producers and co-packers dealing with BRCGS, SALSA and retailer standards.
The skills carry across, which is the point. Retailer-grade compliance is a far higher bar than an FHRS inspection, so a kitchen judged against manufacturing habits tends to do well. And a factory that has had an EHO in the building understands why the officer asks what they ask.
What a piece of work looks like
- A conversation first — free, half an hour, on the phone. If you do not need me I will tell you.
- A fixed fee, quoted before anything starts. No day rates that grow.
- The visit or the document work, done at a time that suits your trading pattern — weekends included.
- A written report you can actually act on: what to fix, in what order, and what evidence closes it.
- A follow-up, so the plan does not die in your inbox.
Site visits run across Birmingham, Solihull, Coventry, Wolverhampton, Walsall, Dudley, Sandwell and the wider West Midlands, and document work can be done remotely anywhere.
If you are still not sure
Book the mock inspection. It is the cheapest way to find out where you actually stand, and everything else follows from what it finds. If your situation is a rating already on the door, start with rating recovery; if a customer has just asked for a certificate, start with manufacturing compliance.
Not sure which one you need?
Ring me and describe the situation. Thirty minutes, free, and you will get a straight answer — including if that answer is that you do not need to spend anything.
